Jericalla

Jericalla is a baked dessert of milk, eggs, sugar, vanilla and cinnamon, emblematic of Guadalajara, Jalisco. Tradition says it was created at the Hospicio Cabañas in the 19th century as nourishing food for the children there.

It resembles flan but has no caramel: its top is deliberately browned in the oven, forming a toasted layer.
