Palanquetas (Peanut Brittle Bars)
A palanqueta is a crunchy bar of toasted peanuts bound with piloncillo or caramelized sugar. It is one of Mexico’s classic traditional sweets and is especially associated with Pachuca and the mining towns of Hidalgo.
Don’t confuse it with the alegría, another traditional bar made with amaranth instead of peanuts.
