The Seven Moles of Oaxaca
Oaxaca is known as “the land of the seven moles” for its seven classic varieties: negro, rojo, coloradito, amarillo, verde, chichilo and manchamanteles. Each combines chiles, spices and seeds in its own way; mole negro, made with chilhuacle chiles and chocolate, is the best known.
Don’t confuse Oaxaca’s moles with mole poblano: Puebla is famous for one celebrated mole, while Oaxaca is famous for the range of seven.
