Cabrito
Cabrito is roast young goat, the signature dish of Nuevo León and especially of Monterrey. In the classic version, cabrito al pastor, the kid is skewered on a rod and slow-roasted beside mesquite embers.
It reflects the ranching tradition of Mexico’s arid northeast, where goat herding has been central since colonial times.
