Agave

The maguey is a large agave that was one of the most useful plants in ancient central Mexico. Its sweet sap, aguamiel, was fermented into pulque, a mildly alcoholic ritual drink; its leaves yielded ixtle fiber for cloth, rope, and cordage; even its spines served as needles.

Don’t confuse pulque with tequila or mezcal: those are distilled agave spirits that appeared after the conquest, since distillation arrived with the Europeans.
