Tamal

The zacahuil is an enormous tamal from the Huasteca region, which includes northern Veracruz as well as parts of San Luis Potosí and Hidalgo. Made with coarse corn masa and pork seasoned with chiles, it is wrapped in banana leaves and baked for hours in a wood-fired oven; a single zacahuil can feed dozens of people and is a fixture of markets and festive gatherings.
