Sope

Corn masa — dough made from nixtamalized corn — is the base of countless Mexican antojitos. A sope is a small, thick round with pinched edges, topped with beans, meat and cream; a tlacoyo is an oval patty stuffed with beans, requesón cheese or fava paste; and a memela, typical of Oaxaca and Puebla, is a flattened oval topped with salsa and cheese. All three are cousins of the tortilla, made from the same dough but shaped and garnished differently.
