Queso menonita

Mennonite communities emigrated from Canada to Mexico in the 1920s and settled mainly around Cuauhtémoc, Chihuahua, where they became famous for their dairy farming. Their mild, pale-yellow cheese is known as queso menonita or queso Chihuahua and is prized for how well it melts.

Don’t confuse it with queso Oaxaca (quesillo), the white string cheese from southern Mexico that is pulled into ropes and wound into balls.
