Pozole

Pozole is a hearty broth made from large kernels of cacahuazintle corn (hominy), usually cooked with pork or chicken and topped with lettuce, radish, onion, oregano, and lime. It comes in white, red, and green versions — red is typical of Jalisco and green of Guerrero — and it is a star dish of the Independence Day celebrations in September.
