Opuntia ficus-indica
Despite its name, queso de tuna contains no cheese and no fish: tuna is the fruit of the prickly pear cactus. It is a dense, dark traditional sweet made by boiling and beating the juice of the cardona prickly pear until it sets in molds.
It is a signature product of the arid highlands of San Luis Potosí, where wild prickly pear cactus is abundant and its fruit has been harvested since pre-Hispanic times.
