Mole poblano
Mole poblano is a thick sauce of dried chiles, spices, seeds, and a touch of chocolate, usually served over turkey or chicken. Tradition credits its creation to the nuns of the Santa Rosa convent in colonial Puebla, and it has become a festive dish for all of Mexico. Don’t confuse it with the moles of Oaxaca — ‘the land of the seven moles,’ famous for mole negro, among others.
