Mole oaxaqueño
Oaxaca is known as “the land of the seven moles” for its seven classic varieties: negro, rojo, coloradito, amarillo, verde, chichilo and manchamanteles. Mole is a complex sauce combining chiles, spices and seeds — and sometimes chocolate — usually served over meat.
Don’t confuse this with Puebla, which is famous for one celebrated mole, mole poblano, but not for the seven.
