Jericalla

Jericalla is a baked custard of milk, eggs, sugar, vanilla and cinnamon, emblematic of Guadalajara, Jalisco. Tradition says it was created in the city’s Cabañas orphanage in the 19th century as a nutritious treat for the children.

It resembles flan but has no caramel sauce; instead, its top is deliberately browned in the oven, giving it a toasted layer somewhat like a crème brûlée without the hard sugar crust.
