Cochinita pibil
Cochinita pibil is Yucatán’s most famous dish: pork marinated in achiote (annatto) paste and bitter orange juice, wrapped in banana leaves, and slow-cooked. Its name comes from the Maya word ‘pib,’ the underground earth oven traditionally used to bake it. It is typically served with pickled red onion and habanero chile.
