Cajeta (dulce)
Cajeta is a thick, sweet caramel made by slowly simmering goat’s milk with sugar until it thickens and turns a deep golden brown. It is similar to dulce de leche, but is traditionally made with goat’s milk rather than cow’s milk.
The city of Celaya, in Guanajuato, is famous for its cajeta, which is eaten on its own, spread on bread, or as a filling for crepes and wafer sandwiches called obleas.
