Cabrito

Cabrito is roast kid goat, the emblematic dish of Nuevo León and especially of its capital, Monterrey. In the classic preparation, cabrito al pastor, the young goat is slowly roasted over mesquite coals on a spit.

The dish reflects the ranching heritage of Mexico’s arid northeast, where goat herding has been central since colonial times, and it remains the signature meal served at celebrations in the region.
