Agave
Tequila is Mexico’s most internationally famous spirit. It is distilled from the cooked and fermented heart of the blue agave plant and takes its name from the town of Tequila, Jalisco. It is protected by a denomination of origin, so authentic tequila can only be produced in designated regions of Mexico.
Other traditional Mexican drinks also come from agave: mezcal is a broader family of agave spirits, and pulque is a fermented, undistilled agave drink from pre-Hispanic times. Tequila is the answer this question is looking for.
